Heat the clarified butter or oil in a pan. Chop the herbs and mix them with the breadcrumbs. Whisk the egg and add a little salt. Cut the turkey cutlets into strips, salt them and coat them with flour, egg and the herb breadcrumbs. Fry the herb-turkey-sticks in hot fat on both sides until they are golden brown, remove from the pan and drain on paper towels.
